One of the hardest businesses to get started in New York City is the restaurant business. It’s UNBELIEVABLY hard! People will be in the middle of setting up a new cafe, and just give up, leaving it half finished, walking away from $100,000 or more. It’s. Just. Hard.

That’s why I was so shocked when I heard this comment as I was walking through the Union Square Farmer’s Market a couple Saturdays ago: “It must be so easy to be a chef around here!”

WHAT??? I almost screamed out loud!

So that’s where we’ll start this month’s story. “It must be so easy to be a chef around here.” What do you think would start that conversation, and where would it lead?
